Hi, I’m JEnnifer Koslo.

I feel as if it is my mission in life to educate people on how to fuel themselves with real foods that energize them so that they can live their best lives.

I have written 10 healthy eating cookbooks and work with all types of clients with all types of needs: athletes training for a marathon, people with high blood pressure and other health-related issues, teens with allergies, meat-eaters, plant eaters, and people just looking to take their nutrition, health, and fitness to the next level.

I’m a registered dietitian nutritionist and personal trainer, runner, author, recipe developer, college professor, and mom to a cockapoo mix named Panda.

Nutrition and fitness have always been a part of my life, and even as a kid, I had a keen sense of how the foods I ate affected my energy levels. How many kids do you know make a “Do’s and Don’ts” list for mom for what to include in packed lunches that include statements like “no cookies except if they are homemade” - not too many, I am guessing! But that doesn’t mean I deprive myself or eat bland food. I am a self-taught vegan “chef” who loves experimenting in the kitchen and trying new recipes and foods.

And when it comes to fitness, I have been active my whole life and have lots of practice tweaking my diet to improve my performance. In my “hey-day,” I was actually really good at running from 5Ks up to marathons and sprint distance triathlons. Competing in an Ironman is on my bucket list…. I am also a bit of a science nerd and keep myself educated on all things nutrition and health-related.

I have a BS in biology from Juniata College, a dual MS in nutrition and exercise science from Colorado State University, a Ph.D. in education from Capella University. I have been a registered dietitian nutritionist since 2000 and a certified personal trainer since 2004. I am also a licensed dietitian in the state of Texas, where I currently live. I was a US Peace Corps volunteer for 2 1/2 years in Sierra Leone, West Africa, giving me a unique perspective on life and health.
