Looking for healthy and delicious recipes for Mother’s Day? If so, you’ve come to the right place! Strawberries are in season, so today I am sharing two healthy strawberry recipes I created for Mother’s Day.

 

An extremely versatile fruit, strawberries go great in salads, smoothies, muffins, savory dishes, and even salsa. They are in season late April through August, so there is no time like the present to take advantage of strawberries. Strawberries are one of my mom’s favorite fruits, and maybe yours too, so why not make her one of these healthy strawberry recipes for Mother’s Day?

Strawberry Health Benefits

 

Have you heard of “8-a-Day?” It’s the California Strawberry Commissions campaign promoting the health benefits of eating 8 strawberries a day. Clinical research suggests that eating just one serving of 8 strawberries a day may improve heart health, help manage diabetes, support brain health, and reduce the risk of some cancers.

 

A serving of eight medium strawberries has a mere 28 calories and provides over 2 grams of fiber, more vitamin C than an orange, and is packed with beneficial antioxidants, phytochemicals, and nutrients, including heart healthy folate and blood pressure regulating potassium. Plus they taste great!

 

Healthy Strawberry Recipes for Mother’s Day

 

Without further delay, here are two quick and easy, healthy strawberry recipes for Mother’s Day:

 

Strawberry Banana Protein Muffins

 

Prep time: 10 minutes, Cook time: 20 minutes

Serves: 12

Ingredients:

  • 2 ripe bananas, mashed
  • 1 egg, large (or 2 egg whites)
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • 1 ¼ cups oat flour
  • ½ cup protein powder* (about 2 servings)
  • 2 tablespoons ground flaxseed
  • 2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup fresh strawberries, sliced or diced depending on their size
  • ¼-1/2 cup sliced almonds (optional), this will add a nice crunch and healthy fats
  • dash cinnamon

 

  1. Preheat oven to 350 F, spray a 12 serving muffin pan with nonstick spray and set aside. (I actually prefer silicone because you don’t have to spray them and they clean up super fast).
  2. In a medium bowl, mash the bananas with a fork until smooth. Add the egg, Greek yogurt, almond milk, and vanilla extract. Mix with a fork until smooth and all wet ingredients are combined.
  3. In another medium bowl, mix the dry ingredients: oat flour, protein powder, flax, baking powder, salt, cinnamon, and nuts.
  4. Add dry ingredients to the wet and mix just enough to combine. Add strawberries and stir just to incorporate.
  5. Distribute batter evenly among the 12 muffin forms. Bake for 20 minutes or until a toothpick inserted in the middle comes out clean.
  6. Enjoy!

*Plant proteins are generally best for baking as whey can make baked goods dry and rubbery. Vega proteins bake well and so does pea protein.

Per serving with ¼ cup sliced almonds:

Calories: 108; Total fat: 2 g; Sodium: 134 mg; Carbohydrates: 17 g; Fiber: 3 g; Protein: 7 g

 

Chocolate Covered Strawberry Smoothie

 

Creamy and delicious, this recipe is full of antioxidants, vitamins, minerals, fiber, and protein.

 

Prep time: 5 minutes

Serves: 2 small or 1 regular size smoothie

Ingredients:

1 cup frozen strawberries

1 frozen banana

2 tablespoons unsweetened cocoa powder

½ cup plain nonfat or low fat Greek yogurt

1 teaspoon vanilla extract

1 cup milk of choice (plant or dairy)

1 tablespoon chia seeds

½ tablespoon almond butter

1 cup ice

 

  1. Soak the chia seeds in just enough water to cover for about 10 minutes until they form a gel.
  2. Once the chia seeds form a gel, add all of the ingredients to a high speed blender and process until smooth.
  3. Top with additional cocoa powder if desired.

 

For 2 servings:

Calories: 133; Total fat: 6 g; Carbohydrates: 16 g; Fiber: 6 g; Protein: 10 g
